Лангопита и цамарелла: неизвестные деликатесы Кипра

В этой подборке – те угощения, которые не найти в крупных городах Кипра. Их готовят по старинным рецептам и едят только в небольших деревнях. Попробуйте их, чтобы познакомиться с аутентичной кипрской кухней.

Смола-жвачка

Смолу терпентинного дерева или писсу, издревле используют в качестве жвачки.

Производили смолу, в основном. турки-киприоты в селениях Лемба, Тала и Киссонерга. После межобщинных столкновений 1963 года они покинули свои родные деревни, и производство писсы остановилось. Сегодня смолу по традиционной методике готовят на территории Героскипу.

Вот как это происходит: на дереве делаются надрезы, смолу собирают, а затем фильтруют с помощью веточек тимьяна. Затем ее нагревают, чтобы она стала мягче, и процеживают через марлю. После этого смолу погружают в холодную воду, она становится мягкой и податливой, ее разминают, пока она не приобретет светлый оттенок. После этого жвачку укладывают в чистую ткань на сутки.

Халиджи Тиллирии

Халиджи — это мягкий сыр белого цвета с дырочками и кисловатым вкусом. Изготавливается в области Тиллирия из овечьего или козьего молока. Его особенность в том, что молоко для сыра берется сразу из-под животного, не подвергаясь никакой термической обработке. Молоко пропускают через марлю, добавляют сычужный фермент и оставляют на час, чтобы оно створожилось. Затем массу помещают в корзинки, утрамбовывают, нарезают на четвертинки и помещают в сыворотку. При низких температурах сыру требуется около 40 дней для созревания, при высоких – меньше.

Аркатена из Омодоса

Аркатена – это булочка, которая делается из закваски и гороха. Перемолотый горох и имбирь засыпают в кипяченую воду, в течение суток на поверхности образуется пена («аркатис»), которая собирается в отдельный сосуд. В пену засыпают муку и закваску и ждут, пока тесто поднимется. Затем из него пекут вкусные и сытные пирожки.

Пафосский сыр

Как и халлуми, сыр родом из Пафоса изготавливается из овечьего и/или козьего молока, но отличить их друг от друга  легко — второй более жесткий снаружи и слегка желтоватый.

Его готовят в начале февраля, а затем оставляют дозревать до Пасхи. Такой сыр едят как самостоятельный деликатес, так и используют для приготовления флаун.

Цамарелла и апохтин

Под этими странными названиями всего лишь скрываются способы на долгое время сохранить мясо. Для цамареллы используется мясо козы с лопатки или бедра. Кости удаляются, мясо нарезается на большие куски и посыпается солью. Затем куски помещаются под пресс на одну ночь. На следующий день они выставляются на солнце и вялятся в течение 5-10 дней. После этого мясо погружают на 2-3 минуты в кипящую воду, посыпают орегано и выставляют опять на солнце на один день. По такой же технологии можно приготовить более крупные куски туши или даже целую выпотрошенную козу, в этом случае блюдо будет называться апохтин. Мясо, приготовленное таким образом часто употребляют, как закуску к зивании.

Акафиотико

Сыр, который делают в селении Аканфу из сырого козьего молока всегда почитался, как один из лучших на острове. В козье молоко добавляют сычужный фермент, собирают получившееся творожное зерно и спрессовывают его в корзинках. Затем корзинки целиком кипятят, сыр солят и оставляют настаиваться. После этого готовый сыр выставляют ночью на воздух на 3-4 ночи, коптят или окунают в воск.

Лангопиты из Ризокарпаса

Лангопита — это лепешка, которая поджаривается на плоском камне. В Ризокарпасе эти лепешки готовили на 29 августа, день усекновения главы Иоанна Предтечи.

Тесто простое – из муки, закваски и воды. После того, как тесто поднялось, на огне разогревают камень, смазывают его маслом и выкладывают тонко раскатанное тесто, чтобы обжарить его с двух сторон.

    1            Application of terms

    4            Your obligations

    a not act in a way, or use or introduce anything (including any virus, worm, Trojan horse, timebomb, keystroke logger, spyware or other similar feature) that in any way compromises, or may compromise, the Website or any Underlying System, or otherwise attempt to damage or interfere with the Website or any Underlying System; and

    10.3      For us to waive a right under these Terms, the waiver must be in writing.

    10.4      Clauses which, by their nature, are intended to survive termination of these Terms, including clauses 5, 6, 7, 10.1, continue in force.

    10.5      If any part or provision of these Terms is or becomes illegal, unenforceable, or invalid, that part or provision is deemed to be modified to the extent

    required to remedy the illegality, unenforceability or invalidity. If a modification is not possible, the part or provision must be treated for all purposes as

    severed from these Terms. The remainder of these Terms will be binding on you.

    10.6      These Terms set out everything agreed by the parties relating to your use of the Website and supersede and cancel anything discussed, exchanged or

    agreed prior to you agreeing to these Terms. The parties have not relied on any representation, warranty or agreement relating to the Website that is not

    expressly set out in the Terms, and no such representation, warranty or agreement has any effect from the date you agreed to these Terms.
